CHEDDAR CHICKEN SPAGHETTI

one 8-ounce package spaghetti
3/4 teaspoons garlic salt
1 medium onion, chopped
1 Tablespoon butter
1 can Cream of Chicken soup
1 cup cheddar cheese, shredded
1 1/2 cups cooked chicken, diced
salt to taste
grated cheese cracker crumbs

Cook spaghetti in boiling salted water with garlic salt, drain and rinse with hot water.  Sauté onion in butter until brown.  Mix all ingredients in a baking dish, except cheese and crumbs.  Sprinkle the cheese and cracker crumbs over the top.  Bake for 25 minutes at 350 degrees.

CHICKEN MEXI-MELT
My sister brought this recipe back with her from Madrid, Spain.

Sauce:

One chopped onion
One can cream of mushroom soup
One can cream of chicken soup
One small can tomatoes and green chilies
One cup sour cream
One clove garlic, crushed

Place all sauce ingredients in a bowl and mix well.

Other:

4 cups cooked chicken, cut up
One bag Tostados chips, crumbled
¾ pound shredded cheddar cheese

Grease the bottom of a crockpot, then layer the ingredients in the following order - chicken, chips, sauce, cheese.  Do this twice.

For best results, cook on low for 6-8 hours.  In a pinch, cook on high for 3-4 hours.  DO NOT stir until just before serving.

CREAMY MAC AND HAM BAKE

1 package (7-1/4 oz.) Macaroni and Cheese dinner
2 cups ham cubes
1 cup sour cream
2 Tablespoons sliced green onion
1 Tablespoon prepared mustard
1/4 teaspoon caraway seed
1 cup fresh torn rye bread crumbs
2 Tablespoons butter or margarine , melted

Prepare mac and chees dinner as directed on package.  Add ham, sour cream, onion, mustard and caraway seed; mix lightly.

Spoon into a 10x6-inch baking dish.  Top with crumbs; drizzle with butter.

Bake at 350 degrees for 20 minutes.

Serves 4-6

TURKEY BROCCOLI CASSEROLE

2 10 oz packages frozen broccoli
2 cups coarsely diced cooked turkey
1 can (10 1/2 oz) cream of mushroom soup
1/2 cup skim milk
1/2 cup grated cheddar cheese

Preheat oven to 375 degrees.
Cook broccoli according to package directions.  Layer in 12 x 8 inch baking dish.  Spread turkey evenly on top.  Combine soup with milk, mix until smooth and pour over turkey.  Sprinkle grated cheese on top.  Bake for 30 minutes.   Let stand 5 minutes.

Makes 6 servings
